Beta 1,3/1,6 glucans from the cell walls of baker's yeast are long-chain branched polysaccharides that are a string of the same basic building block - beta 1,3/1,6 glucan.
In the intestinal mucosa, they are recognized by certain immune defense cells and activate the immune system.
Beta glucans pass through the stomach into the small intestine. There in the intestinal mucosa is one of the most important areas of our immune system.
Around 70% of our defense cells are located here. The macrophages are also integrated into the intestinal mucosa (shown in dark purple).
Macrophages have a docking site for beta 1,3/1,6 glucans on their surface. Via this docking site, the macrophage takes up the beta glucans (shown here in green) into the cell, breaks them up and releases the fragments. This process activates the immune system.
